Red Garnet Amaranth

 Mild beet-like, slightly earthy flavor. Gorgous, wispy fuscia stems with burgundy leaves. A favorite with chefs. Great with anything, even chocolate avocado mousse! Really makes most any dish pop! High in protein, vitamins K, E, C, Calcium, Iron and Beta-Carotene. Check out the last photo in the series above. Amaranth is one of my most favorite things to grow not only as a microgreen, but also to full size in my garden! The one I am holding in the photo was over 12 feet tall before it snapped in a wind storm and I harvested the seeds. When started in spring, by late summer they look like giant muppets bobbing back and forth in the breeze. They thrive in the heat too...Such an awesome plant for so many reasons!
